Dry White Wine - PROTECTED DESIGNATION OF ORIGIN SANTORINI

As a result of the long experience of G. Gavalas and with belief in traditional winemaking methods but having, at the same time, as an ally the modern know-how, Gavalas winery invites you to enjoy the white wine PDO Santorini “Natural Ferment”.

The grapes are harvested in early to middle of August, selected and then vinified in stainless steel vats under controlled conditions but following the traditional method of winemaking/vinification. The combination of the explosive varietal Assyrtiko and the capacity of the wild yeasts is expressed by this wine which is characterized by its fruity profile and consists in a worthy representative of the capabilities of Santorini’s products. Aromas of pear and white flowers, full body, with fresh acidity and pleasant mineral aftertaste.

An ideal accompaniment to seafood, fish, pasta, white meats with lightly spicy sauces and cheese.
