Dry White Wine - PROTECTED DESIGNATION OF ORIGIN SANTORINI
Assyrtiko is the main varietal of the island. This vineyard is considered to be the oldest in Europe. It has never been affected by the Phylloxera disease, and the grapes are grown on original rootstock. The rainfall on the island is limited and the winds can be very powerful. In order to protect the grapes from the strong winds, the vines are pruned in a round form called kouloura – a characteristic way of pruning in Santorini – so that the fruit can mature in the center. Because of the above the yield is very low.
The wine Assyrtiko (100 %) provides a multi-dimensional balance of minerals and fruits. Flavors of green apple, pineapple and citrus accompany floral aromas and refreshing acidity. Full body and pleasant after taste.
Paired with seafood, fish, pasta, white meat, white cheese and vegetables with lemon sauce.
