Dry White Wine - PROTECTED GEOGRAPHICAL INDICATION CYCLADES
Aidani is one of the 3 main white varietals of the island that can be used in the production of PDO Santorini and PGI Cyclades wines. It is ideal for fresh high quality wines with intense aromatic complexity.?he grapes are harvested in the beginning of August. Cold maceration is taking place for few hours and then the fermentation is carried out in stainless steel vats at 17° C. Before bottling, the wine remains on the lees for approximately two months.
Out of this indigenous varietal we vinified the dry wine ‘’Aidani’’ which reveals aromas of citrus, tropical fruits, white flowers and herbs. It is characterized by minerality and light body combined with refreshing and pleasant acidity.
Paired with fruits, seafood and white meat.
